Slimming World Cloud Cake

Ingredients (serves 4)

  • 4 large eggs, separated
  • 1–2 tablespoons sweetener (like Splenda or Stevia)
  • 1 teaspoon vanilla extract
  • 1 tablespoon plain fat-free yogurt (optional for extra moisture)
  • Optional toppings: fresh berries, sugar-free syrup, or a dusting of sweetener

Instructions

  1. Preheat the oven
  • Preheat to 180°C / 350°F. Line a small cake tin with parchment paper.
  1. Whip the egg whites
  • Beat the egg whites until stiff peaks form. This is what gives the cake its cloud-like texture.
  1. Mix the yolks
  • In a separate bowl, whisk the egg yolks, sweetener, vanilla extract, and yogurt until smooth.
  1. Fold whites into yolks
  • Gently fold the whipped egg whites into the yolk mixture in batches, being careful not to deflate the air.
  1. Bake
  • Pour into the prepared tin and bake for 15–20 minutes, or until lightly golden and a skewer comes out clean.
  1. Cool and serve
  • Let it cool slightly, then slice and serve with fresh berries or a drizzle of sugar-free syrup.

Tips for Perfect Cloud Cake

  • Make sure no yolk gets into the whites, or they won’t whip properly.
  • Fold gently with a spatula to keep it airy.
  • Can be served warm or chilled, depending on preference.
