  • ¼ cup onion, finely chopped
  • ½ cup shredded cheese (cheddar works best)

🔪 Instructions

  1. Preheat oven to 180°C (350°F) and grease a muffin tin.
  2. Prep filling: Lightly sauté onions and peppers for 2–3 minutes (optional but improves flavor).
  3. Whisk eggs: In a bowl, whisk eggs, milk, salt, pepper, and spices.
  4. Assemble:
    • Add ham, veggies, and cheese evenly into each muffin cup
    • Pour egg mixture over the top (about ¾ full)
  5. Bake for 18–22 minutes, until set in the center.
  6. Cool slightly, then remove and serve.
