🍗 Chicken and Dumplings

Ingredients

For the Soup:

  • 1 whole chicken (3–4 lbs) or 4–5 bone-in chicken thighs/breasts
  • 6 cups chicken broth
  • 2–3 carrots, sliced
  • 2–3 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1–2 tsp dried thyme or fresh thyme sprigs
  • 1–2 bay leaves
  • Salt & pepper to taste

For the Dumplings:

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp butter or oil
  • ½ cup milk (more if needed)

Instructions

1. Cook the Chicken

  1. Place chicken in a large pot with broth, carrots, celery, onion, garlic, thyme, and bay leaves.
  2. Bring to a boil, then simmer for 45–60 minutes until chicken is fully cooked.
  3. Remove chicken, shred the meat, and discard bones and skin. Return shredded chicken to the pot.

2. Make the Dumplings

  1. In a bowl, mix flour, baking powder, and salt.
  2. Cut in butter until mixture is crumbly.
  3. Stir in milk to form a soft dough.

3. Cook the Dumplings

  1. Bring the soup to a gentle boil.
  2. Drop spoonfuls of dumpling dough into the simmering soup.
  3. Cover pot and cook for 12–15 minutes without lifting the lid.

💡 Tips

  • Sauté vegetables before adding broth for extra flavor.
  • Add peas or corn near the end for sweetness and color.
  • Do not lift the lid while dumplings cook—they need steam to rise.
