Ingredients

  • 2 lbs beef stew meat (chuck or sirloin), cut into bite-sized pieces

  • 8 oz mushrooms, sliced

  • 2 tablespoons Worcestershire sauce

Instructions

  1. Prep the slow cooker: Place beef, onion, garlic, and mushrooms in the slow cooker.
  2. Add liquids & seasoning: Pour in beef broth, red wine, and Worcestershire sauce. Sprinkle thyme, paprika, salt, and pepper over the top. Stir to combine.
  3. Cook low & slow: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender.
  4. Thicken sauce: About 30 minutes before serving, mix cornstarch and cold water into a slurry. Stir into the slow cooker to thicken the gravy.
  5. Serve: Spoon over mashed potatoes, rice, or egg noodles. Garnish with fresh parsley if desired.
