Ingredients (Serves 4–6)

  • 1 medium green cabbage, cored and sliced
  • 6–8 slices bacon, chopped
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar (optional, balances flavor)
  • Salt & black pepper, to taste
  • Optional: pinch of red pepper flakes

1. Cook the bacon

  • In a large skillet or Dutch oven, cook bacon over medium heat until crispy.
  • Remove bacon and set aside, leaving the fat in the pan.

2. Sauté onion & garlic

  • Add sliced onion to the bacon fat and cook until soft (about 5 minutes).
  • Stir in garlic and cook 1 more minute.

3. Add cabbage

  • Add sliced cabbage to the pan.
  • Toss to coat in the bacon fat and cook for 5–7 minutes until it starts to soften.

4. Braise

  • Pour in chicken broth and vinegar.
  • Add sugar, salt, pepper, and optional red pepper flakes.
  • Cover and simmer on low for 15–20 minutes, stirring occasionally, until tender.

5. Finish

  • Stir bacon back in.
  • Taste and adjust seasoning.

  • Use red cabbage for a sweeter, more colorful version
