🍫 Homemade Chocolate Crunch Bars

Ingredients (Makes ~12 bars)

  • 2 cups (200 g) crisped rice cereal or crushed wafers
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) corn syrup or golden syrup
  • ½ cup (115 g) unsalted butter
  • 1 cup (175 g) chocolate chips (milk, dark, or a mix)
  • ½ tsp vanilla extract
  • Optional: pinch of salt, or nuts/coconut flakes for extra crunch

Instructions

  1. Prepare Pan:
    Line an 8×8-inch (20×20 cm) pan with parchment paper and lightly grease.
  2. Make Crunch Base:
    • In a medium saucepan over medium heat, combine sugar, corn syrup, and butter.
    • Stir constantly until melted and bubbly.
    • Remove from heat and stir in vanilla (and salt if using).
  3. Combine with Cereal:
    • Pour the syrup mixture over the crisped rice cereal.
    • Stir quickly until the cereal is fully coated.
  4. Press Into Pan:
    • Transfer mixture into prepared pan.
    • Press down firmly with a spatula or greased hands to compact it evenly.
  5. Add Chocolate Topping:
    • Melt chocolate chips in a microwave-safe bowl (30-second intervals, stirring) or using a double boiler.
    • Pour melted chocolate over the crunch base and spread evenly.
  6. Set:
    • Chill in the fridge for 1–2 hours until the chocolate is firm.
  7. Cut Into Bars:
    • Remove from pan using parchment paper.
    • Cut into squares or rectangles using a sharp knife.

Tips

  • For extra flavor: Sprinkle crushed nuts, coconut flakes, or a pinch of sea salt on top of chocolate before chilling.
  • Storage: Keep bars in an airtight container at room temperature or in the fridge for up to a week.
  • Make it fudgier: Add a tablespoon of peanut butter to the chocolate topping for a richer taste.
