Lemon garlic potatoes

Here’s a delicious and simple way to make Lemon Garlic Potatoes—bright, flavorful, and perfect as a side dish:


Ingredients (serves 4)

  • 2 lbs (≈900 g) potatoes, cut into wedges or cubes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried oregano or thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat to 400°F (200°C).
  2. Prepare Potatoes: Toss potato wedges in olive oil, garlic, salt, pepper, and herbs.
  3. Add Lemon Flavor: Sprinkle lemon zest over the potatoes and drizzle with half the lemon juice. Toss to coat evenly.
  4. Roast: Spread potatoes in a single layer on a baking sheet. Roast for 25–35 minutes, flipping halfway through, until golden and crispy.
  5. Finish with Lemon: After baking, drizzle the remaining lemon juice over the potatoes and toss lightly.
  6. Garnish and Serve: Sprinkle chopped parsley on top for freshness. Serve hot.

Tip: For extra crispiness, soak potato wedges in cold water for 20–30 minutes before roasting, then pat dry.
