🥣 Ingredients

  • 2 cups granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 2 cups chopped pecans (or mixed nuts)

🍴 Instructions

  1. Cook the base
    • In a saucepan, combine sugar, evaporated milk, and butter.
    • Cook over medium heat, stirring constantly.
  2. Bring to soft-ball stage
    • Let it boil until it reaches about 235–240°F (113–115°C)
    • If you don’t have a thermometer: drop a little into cold water—it should form a soft ball.
  3. Add flavor & nuts
    • Remove from heat.
    • Stir in vanilla and chopped pecans.
  4. Beat the mixture
    • Stir vigorously for a few minutes until it thickens slightly and starts to lose its gloss.
  5. Drop onto paper
    • Spoon small portions onto parchment or wax paper.
  6. Cool
    • Let them set for 15–20 minutes until firm.

  • Work quickly once it thickens—it sets fast
  • Use toasted pecans for deeper flavor
  • If it turns too hard, it cooked too long; if too soft, it needed a bit more cooking
